AT dawn, bicycles, pedicabs, and pickup trucks filled with fish and shrimps converge on a factory on Jalan Merdeka, Pangandaran, West Java. Asi Puji Astuti, the name of the factory, stands on 6.8 hectares of land. Its 300 or so workers—dressed in white jackets, caps, facemasks, and plastic boots—are diligently at work.

Some sort and weigh the fish, while others go straight to washing, packing, and storing them in the freezer room.
