Modernizing Traditional Cuisine
Though some of Indonesia’s cuisine may be quite well-known, only a handful of regional dishes—such as from Padang, West Sumatra—are truly popular, despite the archipelago’s vastness and its 34 provinces. To popularize local Papuan cuisine, Charles Toto has formed the Jungle Chef Community. The Papuan chef gathers food ingredients from the forest and prepares these ingredients with an international flair. Meanwhile, Meliana Christanty shares Kalimantan’s traditional recipes on social media. At the end of September, the tourism ministry held the Wonderful Indonesia Culinary and Shopping Festival (WICSF) 2017 in 18 Indonesian cities to promote the country’s culinary traditions.
