SMOKE almost continuously puffs out from the stove of Dalikin Siswodiharjo. Very early in the morning, after dozens of kilograms of tofu have been packed for his son to carry to the market, the 67-year-old man is ready to busy himself with something else. The production waste of tofu is processed into either cookies or nuggets. A kilogram of nuggets can be sold at Rp15,000 while a kilogram of cookies can bring in Rp8,000-Rp15,000.
