WHEN the New Order government used rice as the nation’s staple, people in some parts of Indonesia continued to faithfully stick with cassava, sweet potato, sago and corn as their basic food. This local wisdom has proven effective in freeing them from the impact of food crisis when rice supplies are declining, with its prices soaring these days. Following are several examples of local foods from several regions in Indonesia.
