Indonesians in general are hooked on rice. To meet demand, the country must produce nearly 75 million tons of dried unhulled rice a year. There are, however, a wide array of alternative sources of carbohydrates that thrive on Indonesian soil. Below are some of the plants whose potential has yet to be fully tapped.
