Throughout Ramadan and reaching its peak on Idul Fitri, people in different areas of Indonesia get busy preparing special dishes based on the common ingredient: rice. These dishes are normally not available at any time of the year. The ingredients are easy to get, although its preparation can be complicated, and certainly not everyone can make them. With the influx of foreign and fast food influences, these traditional cuisines are fast disappearing from the menu of most Indonesians. Yet, the holy month of Ramadan seems incomplete without these special dishes. Tempo English reports on the diversity of traditional cuisines from the provinces of East Kalimantan, West Sumatra, Lampung, Aceh and West Nusa Tenggara.

Hundreds of children crowded outside Sirathal Mustaqim Mosque in the East Kalimantan district of Samarinda Seberang, just after ashar afternoon prayer two weeks ago. Bowls in their hands, the children were waiting for the mosque kitchen to open. During the current fasting month of Ramadan the mosque is distributing free meals of bubur peca for breaking of the fast. "Mama sends me here," said Ria, a nine-year-old girl.
